My K-Love is still in the UK, and I miss him like whoa! Since he left for his business trip while I was in Cabo, I haven’t seen him for over a week, and the time difference makes it hard to even get in a few live conversations…boo :( He even called the unit yesterday (while I was WORKING) to say a quick hello, that’s how desperate we were to touch base. It was only a 3 minute convo though, since one of my patients went into V-tach right after I picked up the phone. … Read more >

Oh, SILK soy milk, how I missed you – let me count the ways. Glass of silk before leaving for work Silky soy latte from Starbucks to kick start my first day back on the unit Soy misto with lunch (from Starbucks, too) And that’s only noon! Here’s my sammie, packed the night before. It’s smart deli “turkey” with the works. This baby never disappoints! I also had a Berries GoMega odwalla bar with my AM coffee and the dried fruit with my PM JUG of apple juice. Yeah, I really really sugar loaded at… Read more >

Another travel filled day (Mexico to Texas to New York). Sadly, I had to leave the warm, beautiful weather in Mexico (the fun had to end sometime). Even though I’m definitely NOT looking forward to returning to the icy New York climate, I AM ready for the rest of what Manhattan offers (namely the food). Sure, vacation was great, but 4 days was long enough. I never thought I’d say this, but I’m so sick of chips and salsa…That’s the thing about Mexico, there’s not much variety when dining. It’s weird how spoiled you can… Read more >

Coffee #1 frothy soy misto.Coffee #2 lactaid-y latte.Everything in moderation, right? Originally I was supposed to work today, but after the past 2 beyond boring days, I knew they could do without me, so I switched shifts and now I can do all my random errands before I go home (rather than waste precious time with the fam (finally) doing my x-mas shopping). I have been so anxious to get home!!! I really miss my family back in sunny CA. Even though I now have to work on the 1st, sleeping in today ALONE was… Read more >

Hooray! I love weekends 🙂 Since I didn’t have work, I slept in today, which felt amazing. Then, Kyle headed off to MindsMatter, so I curled up with a cup (or 2) of coffee with soymilk (no froth) and watched Home Alone. Such an x-mas classic. I had the last of my bag of dates too. Looks like I’ll need to make a grocery run this weekend, a date-less apartment is a no-no. I also started off my weekend cooking by baking some tofu. Drained and pressed tofu below. After an hour in the oven… Read more >
