Blooming health

Is it really April?  Seems like I was just saying that about March. This past month was pure madness though…moving apartments, a funeral, Kyle’s birthday, ExpoWest, Seinfeld standup, Laura’s last days in the US, a few trips to Nor Cal, antibiotics… I’d really love to finally get settled in April. Cheater soup

What do you get when you combine operation pantry clean out and limited culinary skills?  Cheater soup. I’m pretty good at making soup when I’m standing on the shoulders of giants like Dr. McDougall.  He’s pretty much my idol.   Cheater Soup [vegan & gluten free] 18 oz. lentil soup (2 cups) 1 cup rice 1 cup water/vegetable broth 1/4 cup oil Add contents to crock pot and cook on low for 3 hours.  Voila!  The rice absorbed the delicious flavors of the soup and added some extra carbs to give it staying power and… Read more >

Soup Station

This was my vision for dinner last night. Turned out pretty much exactly how I pictured it! Bonus: it was way tastier than I could have ever hoped for! Balzac

I forgot to mention how my bar stash came to the rescue during our two hour tour through the Reina Sofia. My dad’s blood sugar was bottoming out, so he asked if I had anything on hand.  I always have bars on hand, especially when traveling to less veg-friendly places, so that’s how my Corazonas chocolate chip oatmeal square met it’s final fate.  It didn’t hold him over long though, so it’s a good thing dinner was on the horizon.
