Since a lot of people have been interested in our budget friendly meal planning, here’s what we had this past week. [Spoiler alert: they’re all really inexpensive dinners] Monday Egg noodles with teriyaki tofu, broccoli, & cashews The organic broccoli was leftover from one of last week’s dinners. The roasted salted cashews are a pantry staple. The egg noodles were on sale at WF (we used half of the 1 lb bag/$1.69). The organic tofu was from WF (I baked the whole block/$1.69). As usual, the ‘fu was pressed for 2-3 hours, then baked for… Read more >

It’s still leftover-mania around these parts. I brought home so many mashed potatoes I hardly knew what to do with them all. There’s only so many mashed potatoes a girl can eat! And since I’m anti-waste (and all about re-purposing things into something different and new), I decided to attempt a potato based soup. I banked on the crock-pot to help me out. Kyle was also busy with work – presentations, dinner meetings, etc. Accordingly, I planned out dinners for all five week days, but didn’t assign definite nights for most of them. Instead I just figured… Read more >

I realize certain things are not meant to be photographed. Stew is one of those things. [Same goes for certain angles of my pregnant body. And the spider web situation we have going on in the front yard. And Kyle’s closet. No seriously, it’s out of control.] Maybe Ansel Adams could make this look tasty, but I am working with an iPhone at 5 am in a poorly lit kitchen. Natural sunlight, what?? Just trust me. It’s good.
