Nowadays I tend to post my more creative recipes as opposed to my thrown together quick plates. But every time I show a random meal that I have mindlessly made up I get requests for them to continue. I guess people just want simple. Here is simple: quinoa, carrots, peas, and seitan. Prep: Bulk quinoa from the rice cooker. Frozen peas. Log seitan made before the work week starts. So the only thing I had to do when I got home was chop (horse carrots and seitan) and scoop things onto my plate. It… Read more >

Going into the weekend I had all my meals ready to go. Starting with Thursday night, I made a typical hippie bowl. If I had to choose a combination of ingredients to eat forevermore it would probably be these: quinoa, carrots, corn, seitan, avocado I recently got a question about the ratio of grain to veg to protein in my “hippie bowl” type meals. In all honesty, I don’t consciously compose them with a specific ratio in mind, but if I had to guess I’d say it is pretty much 1:1:1. Sometimes… Read more >

I have a formula that I use to make dinners in as little time as possible, but it relies on food prep. I always prep ahead of time. Have I convinced you to do the same yet? I feel like a broken record, but the posts that seem the most basic and obvious to me still get the most follow up questions. So. I think there’s a misconception about how I eat. For every new recipe I create and share with you guys, there are five others I don’t show because they look like this… Oatmeal with melty peanut butter, cinnamon, and raisins. Not exactly reinventing the wheel with this one. I don’t have magic spells that bake cakes while I’m at work (Sleeping Beauty reference anyone?), nor do I have ingenuity oozing from my pores. Especially after 12 hours of nursing. Simple is fine by me. So whether it’s oats with the works or… Read more >

This past week has been work heavy, which is why I’ve been doing more recipe posts. But my sister hates recipe posts prefers other material (and isn’t afraid to let me know it), so here’s a recap of my weekend. Starting with Friday… I made peanut butter. I made a spinach and pumpkin seed pate. I made bread. I made pancakes. I ate pancakes. I made seitan. I made tofu. And after spending most of the day in the kitchen, Kyle and I opted for a dinner out. We walked to… Read more >
