At first I thought I just wanted a simple breakfast wrap. Spinach, fried egg, Rudi’s GF tortilla. But it looked a little sad (despite the absolutely perfect fried egg), so I took a fridge survey, and decided to make a mustard tofu salad too. It had 1/4 block of extra firm tofu, dijon mustard, honey mustard, plain almond milk, and lemon juice. It was a little bit runny, but I wasn’t too bothered by it. I had an awkward transition mid-week from a normal routine to a night shift routine. The first day is always awkward. I woke up at 7:30 and tried to go back to sleep but wasn’t successful in the least. At 8 I gave up and showered. And breakfasted. With toast and eggs x2. And iced tea with almond milk.
