Ready in the flashiest of flashes

The other night I pulled off dinner from start to finish in 10 minutes flat.  Now I’m fairly certain the leftovers on hand were the supporting actors that allowed this to go down, but I also think this meal could be reproduced in an almost similar time frame again (give or take a few seconds depending on my knife skills). My latest quinoa salad was fantastic, and the best part was that it yielded way more than I expected! What’s a girl to do?  This was an everything but the kitchen sink everything in the fridge kind of salad…including a Strawberry Shortcake coloring book.  It had leftover broccoli, leftover sweet potatoes, leftover quinoa, and a new product too! My titles are just oh-so-clever, aren’t they? In my previous post, I professed my love for Terry Walters and her brilliant cookbook, Clean Food.
