Delish durum

Last night I went to bed at 7:45.  Yeah.  Guess my body was trying to tell me something, huh?  I just went with it.  I had “dinner” at 5, just after posting about my cashew cheese. For those who asked, here’s the recipe I used.  [It’s a combination of a few I’ve seen throughout the blog world and my RFD cookbook] Vegan cashew “cheese” Ingredients: 1 1/4 cup raw cashews (I soaked mine before) 1 tbsp garlic powder 1 tbsp onion powder 1 lemon, juiced (approx. 2-3 tbsp) 2 tbsp nutritional yeast 1/2 large orange… Read more >

Vampire weekend and a new project

This weekend was not my finest in terms of scheduling.  With back to back night shifts, day time yoga classes, and the desire to squeeze in a run when the sun came out from hiding, there was hardly any time for sleeping.  Ambitious?  Or ridiculous?  Either way, I snacked much more than I composed real meals because my body was so out of whack with all the time adjustments.  Awake all night, asleep all morning, awake all afternoon…sometimes it’s just too confusing for my poor GI system.   I wound up finding a solution in… Read more >

A caffeine saga

I worked Monday and Tuesday.  This means that I’m now playing catch up in life and on the blog.  Being out of town this weekend meant that my pre-work food prep was minimal.  However, Kyle and I stopped on the way home from San Clemente for a huge grocery shopping trip, so it wasn’t a complete scavenger hunt.  For breakfast I mixed up my normal oat routine by adding in wheat bran.  Also in the mix was a chopped up baby yellow delicious apple, cinnamon, stevia, and raisins.  The wheat bran didn’t change much in… Read more >

Squash patty-cakes

I’m slightly embarrassed by how long this post has taken to write. I prepped the ingredients over a week ago. I steamed the squash, cooked the quinoa, thawed the spinach and edamame, and assembled the team of seasonings. Then I mixed everything together in a tupperware and forgot about it.   The other day, however, I remembered it in the back of the fridge and quickly took action. I formed patties out of the mix, rolling them smooth between my palms before adding them to a hot pan. Blurrrrry. Some were too difficult to flip… Read more >

Getting gifts from patients

I’m happy to report Thursday’s shift was MUCH better than Wednesday’s.  I had the same patients, but they were much more stable after the previous day’s shenanigans.  I actually prefer having the same patients regardless of how sick they are because there’s a level of familiarity for both me and the patient.  Plus, continuity of care minimizes the chances that stuff will get lost in communication between other care givers, and it’s nice to develop a rapport with them as well as a routine.  Speaking of routines. I packed up my goods, as per usual…. Read more >
