quinoa

A September day

This is an attempt at a “what I ate” full day of food.  I think I got everything. Cantaloupe.  With this, I get credit for vitamin C, vitamin E, riboflavin, folic acid, & B vitamins…it satisfies both a fruit and leafy green requirement as per What To Expect.  Efficiency in my nutrition – I like it!   For breakfast we were out of iced tea AND eggs.  Basically a mini disaster.  I made decaf tea in as little water as possible and cooled it down to room temp with a ton of almond milk.  It… Read more >

Juice pulp

How I’ve been using up juice pulp is with simple and simpler recipes.   Like this quick savory breakfast fry. Quinoa & smoky tempeh strips with leftover carrot pulp (or whatever pulp you have on hand…be it kale, cucumber, etc.). Added to a pan with non-stick spray or olive oil and heated until it gets crispy.   Served with a side of vitamins.  Yum. There’s also quinoa quiche, which is highly adaptable depending on what veggies you have on hand. If you recall, we demolished this between the two of us in one night. You… Read more >

A wedding and a bump

Where oh where to begin.  Last weekend was so full. On Thursday we drove home via the glorious I-5.  If I had to guess how much of my life I’ve spent on that drive… So Thursday morning I got up early because I had a few things I wanted to get done before the commute home.  First, breakfast. Another vegan tofu “scramble” with a sliced peach on the side (as if you couldn’t figure out what that fruit was). And my folate, DHA and iced tea.  Naturally. After breakfast, I ran some errands, and then… Read more >

Hello appetite

Day shift food, including oatmeal, lasagna (two servings), apple, carrots & hummus, and a cinnamon roll.  Details below. Pumpkin and raisin oats made with vanilla almond milk.  I’m officially good and ready for fall. Lasagna that’s bigger than my head.  I had half at lunch time and half an hour later. Snack options. I got home around the same time as Kyle and we each dug into the quinoa quiche I made earlier in the week (meal planning still going strong). I cut it into quarters because I figured it was pretty likely we would… Read more >

Reuniting with the fam

As I previously mentioned, Kyle and I were in Nor Cal (Elk Grove) for a family reunion this past weekend.  It was for Kyle’s mom’s side of the family…and over 50 people (!!!) made the trek.  Part of the reason I had been waiting to share my pregnancy on the blog was because we wanted to tell people in person at this reunion…and you know how once things leak online they make their way to facebook two seconds later and then the whole world knows (not that that’s a bad thing, we just wanted to… Read more >
