Birthday week fun

My birthday week started last weekend with apple picking. After that we headed to lunch at Mendocino Farms.  As much as I love the place, it’s not conveniently located for me.  But since we had already been in the car for well over an hour, we figured what’s an extra few miles out of the way? Trader Joe’s in October

This product right here was reason enough for me to go against my usual standards and indulge in non-organic greek yogurt. I only bought two, proving that self restraint does in fact exist within me.    It’s tangy, tart, and only slightly sweet with hints of ginger and orange.  I loved it.  Had Kyle not been shopping with me, we’d probably have 500 in our fridge right now.  I wonder how long they’ll have these seasonal treats in stock? Roasted Acorn Squash Bowls

I’ve discovered the trick to keep me motivated in the kitchen.    New and different ingredients.  Specifically produce.  This acorn squash was an impulse buy last week and I was so excited to do something fun with it.  I mean, I will happily eat any and every squash plain.  Simply roasted in coconut oil or dipped in nut butter or drizzled with olive oil, salt and pepper.  It doesn’t take much.  But isn’t the most fun thing about acorn squash cutting it in half and using it as a bowl?   Yes.  For sure.  … Read more >

23 week check-in

Pregnancy is weird.  I’m definitely changing more and more as the days go by. I’m 23 weeks today and really starting to look big now.  Super pregnant.  I feel like my bump is a whole other body part.  In the morning, it’s manageable, but as soon as I’m upright and gravity allows things to shift, I feel the weight of it.  Big time.  It’s very much a foreign feeling.  I’m unable to sit comfortably on the couch anymore.  My bump takes up so much space that the bend of my hips needs to be greater… Read more >

  I got pretty lucky with this recipe.  I made it with the scraps I had on hand, and it turned out so great I think it’s worthy of repeating.
