What do we have here? Can you see what’s in there or do I need to zoom in for you. Oh hello there hippie bowl of yum. I cheated on the protein portion. Normally I make my own seitan. You all know I’m frugal. And that I like re-working leftovers. This is not news. So when Alene & Ethel sent me home with extras from the shower, I was really excited to transform them into new dishes not have to cook for a while. Orzo salad with sun dried tomatoes. Quinoa with edamame, kale, and tomatoes. Both of these dishes made their way into the weekly dinner plan immediately. This is basically a summer dish masquerading as a winter dish (because of the red and green colors, okay?). Totally Christmas-y. Some people may get sick of leftovers, but I am quite content eating the same thing over and over and over again. Leftovers x a million. Field Roast wild mushroom quarter loaf. Roasted veggies. Quinoa. Like a never ending Thanksgiving… Blackberries are NOT good in smoothies. The seeds. They’re annoying. But I still have half a bag of frozen berries in the freezer, so…yeah.
