A day in the life…

Of a very pregnant (over 40 weeks and counting!) lady…on maternity leave… Wake up 4+ times throughout the night.  Finally get up for good some time between 6-8 am. Drink weak tea with almond milk and maple syrup.  Wonder how much longer til you can guzzle caffeine again.   Make breakfast #1.  A bowl of oats with nut butter & bananas.  I usually have half the banana at a time since it seems to give me reflux now (realistically everything does).  Play on the computer.  Respond to emails and blog comments.  Make & prep food… Read more >

Color me orange

Here’s a list of my favorite foods that are orange: sweet potatoes butternut squash carrots …and now this dip. I actually set out to re-make my creamy dijon cashew sauce.  I wanted a nut free version – something lighter.  It turned out quite nicely for a low fat food.  Actually it turned out great for any kind of food. Souper yummy

A play on the word soup?  Such an Elise move.  I blame this on my dad (thanks for the pun gene).   Here are a few of the reasons soup is awesome: 1. It’s filling. 2. It’s cheap. 3. It’s easy to make. 4. It can be healthy and still taste really really good. 5. It’s perfect for cold winter months. Creamy Quinoa with Kale

Quickie veggie dinner with mega protein – check! While the kale simmered in a water and olive oil bath, I prepared the sauce.  I took Sabra roasted red pepper hummus and added nutritional yeast to it, then thinned it out with lemon juice and water.  The more hummus you use, the better. Then I added the (already cooked) quinoa to the pan, cracked in a couple of eggs, scrambled the whole thing, and topped it in the lovely hummus sauce.
