Operation Elimination

Prepping for the “elimination phase” of the FODMAPS diet was a bit daunting at first.  I found myself looking up individual foods constantly to see what their chemical structure was (and if they contained FODMAPS).  But once I started to get the hang of it, I came up with lots of meal ideas. My meals will continue to be plant-based, but I want to try and make this as helpful as possible for all my fellow IBSers, so please note, the starred (*) items are for those who aren’t vegan. By the letters

I’ve seen this game going around, and since I’m a fan of such activities, I’m going to give it a go too! A is for Apple, what’s your favorite variety? Loafing around

I made another hippie loaf.  This pumpkin banana bread recipe is crazy yum.  I should have made another batch way sooner.  I don’t know what was holding me back.  Actually I think I do.  I rarely let bananas get to the mega-brown state that is oh-so-perfect for bread making.  Smoothies and oats usually get them long before they reach that point of no return. This batch was moist like a muffin, but also fluffy like bread.  Perfect when warmed and topped with peanut butter. With a side of coffee and berries. The weather lately has… Read more >

On the road again

Does it seem like all I do is drive?  Because it seems that way to me.  After a big celebration on New Year’s Eve, I was out of commission for most of the next day.  Kyle and I eventually hit the road after noon, leaving Chico in the dust snow.  We arrived home to my parents house a few hours later…just in time to watch the end of the Rose Bowl and dig into a family size vat of garlic hummus.  Half a loaf of bread later (not exaggerating), I snoozed, did laundry, and ventured into… Read more >

Orange you glad…

You didn’t work on Christmas Eve and Christmas Day?  I didn’t really mind it, since I got to celebrate early with my family.  On the 24th, I woke up early to sweat out a quick 20 minute Shred, which I followed up with a hearty tupperware full of overnight oats. I used 1/2 cup rolled oats and then mixed in an almost equal portion of canned pumpkin with only an itty bit of water.  This created a crazy thick consistency as it “gelled” overnight.  Other goodies included Tropical Traditions shredded coconut, dried cherries, and NuNatural liquid… Read more >
