Since I returned to eating eggs…a while ago…I no longer consider myself vegan. I’m basically a dairy free vegetarian. But that doesn’t mean I don’t like vegan food. I love it actually. I eat it often. And seeing as October was vegan mofo, I decided to recap some of my daily vegan eats. October 1: Spaghetti Squash with Marinara & Tofurky October 2: Quinoa & Seitan with Red Almond Sauce October 3: Mexican Layered Casserole October 4: Blue Plate’s vegan white bean soup and gardenburger salad October 5: Pumpkin Cheesecake Pie October… Read more >

My memory is gone. Apparently this pregnancy brain fog thing is the real deal. I forgot our garage code last month and had to call Kyle to remind me what it was (I have no idea how my mind blanked out about that since I punch in the four numbers so regularly). And I almost missed a work shift because I had my schedule wrong (I am so lucky the charge nurse called me a few hours beforehand otherwise I definitely would have been a no show at the hospital). I’m constantly going upstairs to… Read more >

Did anyone else see this recipe on the back of this month’s Whole Foods coupon booklet? These appealed to me for a few reasons: 1. They are no-bake (aka quick and effortless) 2. They are seasonal (always a plus) 3. They call for marshmallows (I’ve had smores on the brain for a few months) 4. They use ingredients I had on hand (sorta) I made a lot of substitutions. Like adding pumpkin puree (for more orange and nutrition). And using more than one cereal (GF cornflakes by Erewhon and puffed millet by Arrowhead Mills). And… Read more >

I’m calling this both a cheesecake and a pie for lack of a closer dessert relative. It’s got all the elements of a cheesecake. Minus the dairy. Rich. Decadent. Creamy. Yum. That said, it doesn’t have the tang that a cheesecake has. More like a creamy pumpkin pie I guess? But dang is it delicious. Kinda odd to preface a dessert recipe like this but I just want to convey exactly what this dish is all about. So. Disclaimer: If you want a true [vegan] cheesecake, this is the recipe for you. It’ll wow vegans… Read more >

Every day there’s a new pumpkin recipe on some blog or another. And I drool over every single one. But I’ve been pretty lazy and aside from one batch of pumpkin oats, I haven’t done much else to resolve my lusting taste buds. The other night I put a can of pumpkin out on the counter so when I woke up I’d see it and do something (anything!) with it. Here’s the problem. In the morning I tend to be at my all time laziest. Adding almond milk and maple syrup to my iced… Read more >
