Monday’s sweet tooth

Thanks to my whole foods gift card, I was able to replenish my NuNaturals stevia… This frothy treat is coffee with coconut milk, cinnamon, and NuNaturals.  Luff. Brunch was a bit unconventional…I felt like grilled cheese, so I got crafty and mashed together extra firm Nasoya tofu and nutritional yeast. It looks kinda bizarre, but tasted yum-may. On my laurels

Heavenly humm-becue

Work and what-not

I made a Mexi-kale salad for lunch.  Sure, I just coined the term, but I think it fits.  On top of the kale was wakame seaweed, butternut squash, cherry tomatoes, black beans, and some salsa (added later so it wouldn’t sogg-ify).  Yes, I realize the involvement of seaweed in a south-of-the-border themed salad may be a bit of a stretch, but can’t I just claim poetic license on this one? A recipe and a present

Merry Christmas everyone!!  Unfortunately, I worked today (Christmas day), but yesterday (Christmas eve) was fun for several reasons. 1.  I got the day off of work (although I still had to wake up at 5 am to make sure nobody called in sick…kinda like being an on-call RN). 2.  I had a great brekkie. 2.  I talked to Kyle on the phone while opening my present from him.
