This weekend was a reminder of why Kyle and I moved back to the West Coast. No offense NYC, but when it comes to the weather and the social scene, California is where the party’s at! My latest quinoa salad was fantastic, and the best part was that it yielded way more than I expected! What’s a girl to do? This was an everything but the kitchen sink everything in the fridge kind of salad…including a Strawberry Shortcake coloring book. It had leftover broccoli, leftover sweet potatoes, leftover quinoa, and a new product too! Quorn Naked Chik’n Cultets do have trace amounts of egg whites, so they aren’t vegan. My titles are just oh-so-clever, aren’t they? In my previous post, I professed my love for Terry Walters and her brilliant cookbook, Clean Food. Well, as you can see, I just can’t get enough of her recipes. What a day. Full of a bizarre mix of emotions. I’m not sure I can totally put it into words, so for now I’ll just stick to the photos. Well, what do we have here? My last work lunch for a while included a big salad with a side of carrots and Livin’ Spoonful raw crackers, along with 2 apples, a vegan oatmeal raisin cookie from Candle, and a tupp ‘o zuppa. I promised a giveaway, but I just don’t have it in me tonight. Blogger fail. I do have last night’s dinner, though. When I got home I was in such a wretched mood, I really wasn’t hungry.
