This weekend went by way too quickly.  I played catch up the whole time, and it’s already over! :(  All I do is make massive bulk meals for the week.  Prep prep prep.  In any event, the recap need not be dragged out.  Here are the bare essentials…including how I plan ahead for a week’s worth of work eats.  Brunch Coffee sprinkled with cocoa Sando with hummus and vegan “cheese” on Ezekiel heel pieces. Phew! Vegan waffle taste testing

Last weekend, Kyle and I were invited to brunch. However.  This was no ordinary Sunday brunch.  This was a gathering in the name of brand management (which for me, just meant vegan taste testing). With a task like that, how could I refuse!?! Breaking the feast

The building blocks for a delicious work lunch… Avocado and tofu.  Since I make my work lunches the night before, I am usually in a rush to get to bed.  Thus, tofu prep tends to be on the minimalist side.  I like plain ‘fu so I don’t really care much.  All I did was cut some of the block into cubes, spritz it with Bragg’s and microwave it in a glass bowl with a CoverMate cover.  After 45 seconds, I flipped them around a bit, and popped them back in for another 45 seconds.  It’s… Read more >

H2Oh No

This just keeps getting better and better… Turns out denying the electricians access to our apartment yesterday may have been a blessing in disguise.  Now they can fix both the plumbing and the stove/oven “issues” at the same time while I vacate the apartment for greener pastures (by which, of course, I mean Starbucks).  That’s the only positive thing I can say about being without water for the majority of the day.  I woke up early to clean the apartment and make myself presentable, and at 8:45 on the dot the doorbell rang and next… Read more >
