How to prep for the work week

Many of you have expressed interest in a post dedicated to how I prep for the week.  I have been reluctant to do this (read: lazy) because, quite frankly, it’s a ton of work…taking pictures throughout the process would only add on extra time…and that’s not even including the posting part.  Today, however, I felt inspired.  Here’s a brief look at my process of getting things organized.  Goals: Chop raw vegetables Roast squash/potato/vegetables Make tofu/seitan Make quinoa Make Kyle something (lasagna or pasta in bulk) Miscellaneous dish (“tuna” salad, crock-pot stew, chewy oat bars, etc.)… Read more >

The start of something

Hello 1-1-11!  So nice to meet you.  I know you will be bringing me 365 days of joy.  Before I dig in, though, allow me to share how I dined on the last day of 2010.  Chico, California has a fairly decent hippie population so I wasn’t too surprised when our brunch on the 31st at Cafe Coda had delicious vegan options aplenty. A sweets cycle

Breakfast #1 – awkwardly photographed home-made trail mix of raw almonds, raisins, carob chips, cheerios, and Three Sisters cinnamon sweets. Eaten while Kyle drove me to work at 6:20. Breakfast #2 – quinoa, shredded coconut, chopped apple, goji berries and dried cranberries. Eaten between grand rounds at 10ish. I have discovered a new way to eat quinoa that makes for an amazing breakfast…allow me to share with you. Merry Millennium

Happy holidays everyone! It’s Christmas up in here 🙂 I’m working on the 25th, so Santa was nice and obliging and came early this year (this post is from the 21st). To celebrate as a family, we all went to dinner in the city. I’d been looking forward to Saturday’s date with Lynn since we first lined our lunch up last month.  Unfortunately, I didn’t get to bed on Friday night until almost 4 am.  Oops!
