When my hands are tied up and time is of the essence, I’ve been relying pretty heavily on two things. Theme number one: snack plates Veggies, meatless meatballs, Stubb’s BBQ sauce, Mary’s Gone twigs, sweet potatoes, daiya cheese, GF tortillas… This was a meatless meatball round (WF / 365 brand is bomb). I go through phases with faux proteins. Beyond Meat strips are a fave. So are hard boiled eggs. But sometimes I just stick to nuts instead of a “meat” snack item. These little plates are ideal for munching while P is not napping… Read more >

And I haven’t written a single new post aside from this one I’m working on now. Which may or may not go live before Kyle returns. Suffice it to say, I’m not exactly excelling in either the cooking or the blogging area. Hopefully I’m doing better in the mom department,… Read more >

And bacon!!!!!!!!!! Question: When will it end? Answer: Never [I hope]. Last bite… 🙁 Who else makes sure their last bite is the “perfect bite” with every component in it in the ideal proportion? Anyone else? I know Ethel does this too, but Kyle thinks we are weird. I beg to differ. He will eat a… Read more >

I don’t even get it but I’m going to stop trying to analyze how this magic occurred and just enjoy it. You should too. Seriously. I would NOT be this dramatic if it was mediocre. Coconut “Bacon” [vegan, gluten free, FODMAPs friendly] Ingredients: 1 1/2 cups unsweetened coconut flakes 1 tbsp tamari 1 tbsp maple syrup 1 tsp sesame oil 1/2 tsp liquid smoke pinch of sea salt Directions: Pre-heat oven to 325 degrees F. Mix all… Read more >
