What I Ate Wednesday

***Edited to add**** I just realized this is my 1,000th post.  Crazy!  I might have to celebrate with a giveaway soon! Of course the second my neck and back start feeling normal again my stomach decides to go off the deep end.  Blah.  I probably consumed over 3000 calories yesterday, but absorbed under 100.  I was cursed with overly rapid transit time, if you catch my drift. The first B&G

My friends and I have been planning a special booze and games night for a while now… I’d say it went off rather well.  😉        Hula hoop gladiator softball twister jenga.  And some bevies. :)  Bahahaha. Our cab ride home was ridiculous…the driver had no clue how to drive the 20 blocks from one part of West LA to our apartment and was asking us for directions.  Not good.  Sunday morning I had this beauty waiting for me And now the weekend is over…sad. 

It may not be summer, but I’m still roasting

Ok, I know.  It’s semi-odd to be roasting winter squash in June, right?  But I had a butternut and delicata squash hanging around the kitchen and figured I better seize the day. So I hacked my way into them, lubed the skin down with coconut oil, and popped ‘em in the oven at 375. I made sure to salvage the seeds to roast too.  They are loaded with iron and (quite frankly) delicious.  Those didn’t get coconut oil though.  They were sprayed with PAM and sprinkled in salt.  Nada mas, nada less.
