Peanuts!

10 years ago, if you asked me my favorite nut butter, I probably would have looked at you like you were crazy.  Was there anything other than peanut butter?  I certainly wasn’t aware of any other kinds.* I went through obscene amounts of peanut butter in college.  I was poor and it was cheap easy to steal from the sorority kitchen.  😉 However, since discovering almond butter, cashew butter, and sunflower seed butter, peanuts have been sidelined.  Poor little bench warmers. I’m 29

Despite feigning concern about aging, I really don’t care about sharing how old I am.  Kyle is younger (and he enjoys reminding me of it), but I am healthy and happy and have enjoyed my 20’s so there’s no reason for me to pretend that adding another candle to my cake is some big stressful occasion.  It’s a happy one! Nighty night

Soooo, I’m back on night shifts for the week.  🙁 In an effort to get my sleep schedule as off whack as possible, I stayed up ‘til 1 am on Monday night and slept in ‘til 9 am on Tuesday. Splat go the cookies

I had so many cookie fails today.  It was rather discouraging for my poor baking heart. I made FOUR batches of cookies today. Thai in twenty

Are you ready for the easiest meal ever? frozen stir-fry veggies + 1/4 cup water extra firm tofu 2 tbsp peanut butter 2 tbsp coconut oil Asian spice mix/Chinese five spices blend (I used 365 Asian seasoning) Add the stir-fry veggies, the water, and the spices until the veggies have thawed.  Then add the rest of the ingredients. Serve over rice.  Bam! – you’re in Bangkok – and dinner is done.
