Since I previously posted this week’s prep and my game plan, I figured I might go into the specifics for a few of the meals that I mentioned. I’m in the process of trying to clean out the freezer and use up things that I’ve been storing since 2010. Which includes some frozen meals that I got long ago with various coupons. Side note: Now I know why I don’t buy frozen meals…I forget about them! This red curry with vegetables (with tofu and rice) is by Sukhi’s, a company that’s based in the Bay Area, and has numerous other products I like (ie the naanwich). This product right here was reason enough for me to go against my usual standards and indulge in non-organic greek yogurt. I only bought two, proving that self restraint does in fact exist within me. It’s tangy, tart, and only slightly sweet with hints of ginger and orange. I loved it. Had Kyle not been shopping with me, we’d probably have 500 in our fridge right now. This is the easiest meal of all. I make it at least once a week. It’s flexible depending on what you have on hand, but as long as you have some kind of past in your pantry and some kind of fresh/frozen veggies, you’re set. Boil water. Cook pasta. Recently I’ve been making the fruits of my labor into delicious meals. I don’t know where this love for pesto suddenly came from, but it’s really nice to be able to pick your own food and prepare it in the same day. Thriving basil and parsley plants for the win!
