*Old post alert* I randomly discovered Pappardelle’s pasta when I was strolling the LA Farmer’s Market (the one at the Grove). I didn’t get anything at the time (I was about to go to a show taping and couldn’t exactly bring groceries with me). I mostly remember the sweet potato pasta. I thought it sounded awesome. I’ve alluded to this sauce combo (I hesitate to claim it as a recipe) before. It’s the easiest. It’s basically a lightened up, more nutritious, version of vodka sauce. It’s not dairy free, because Greek yogurt does have dairy. But I know that many people who are sensitive to dairy tolerate greek yogurt (me and my sisters are all included in this category). Some of these may seem lame or boring, but when you want a semi-home-made (healthy) meal lickety split, you can’t be too picky. While I mostly prep for the week in advance, I do leave some days open. Kyle’s coworkers tease him (in a fun, non-mean way) about his healthy vegetarian lunches. Apparently he’s the organic, non GMO hippie of his office, just like I am in mine. 🙂 Now his colleagues are wondering when I’m going to start packing food for all of them.
