Look what Mr. Savory requested for breakfast! Kyle was really proud of his idea for trail mix pancakes. He wants full credit for this breakfast concept (even though I made them), so if you’ve seen these before just keep it to yourself. 😉 I made the batter the night before (leaving the trail mix out) and in the morning breakfast was pretty much ready to go. Trail Mix Pancakes [yields ~10-14 small pancakes] Ingredients: 1 1/2 cup all purpose flour 1 tbsp baking powder 2 tbsp sugar 1/2 tsp salt 1 1/4 cup almond milk… Read more >

This whole Lance Armstrong business really bums me out. I always believed his denials. I guess I just wanted him to be telling the truth about being clean so badly. I read his books way back when they came out and found his story so inspirational. I felt so bad for him when his medals were stripped. And now it turns out he was covering up illegal drug use all along. Sucks. This was my breakfast last Sunday. Then again on Monday. And then again on Wednesday. [Tuesday I went back to the egg and toast routine] There’s no saying how long this will last… Just one massive pancake. The whole batter poured into the 8 inch pan. It’s so fun to eat when it goes on forever and covers the whole plate. These photos are semi-deceiving. These are large dinner plates…making this a pretty sizable flapjack. Oat Peanut Pancake [FODMAPs friendly, gluten free, dairy free; serves 1] Ingredients: 5 tbsp oat flour (certified… Read more >

Since I returned to eating eggs…a while ago…I no longer consider myself vegan. I’m basically a dairy free vegetarian. But that doesn’t mean I don’t like vegan food. I love it actually. I eat it often. And seeing as October was vegan mofo, I decided to recap some of my daily vegan eats. October 1: Spaghetti Squash with Marinara & Tofurky October 2: Quinoa & Seitan with Red Almond Sauce October 3: Mexican Layered Casserole October 4: Blue Plate’s vegan white bean soup and gardenburger salad October 5: Pumpkin Cheesecake Pie October… Read more >
