Overly FODMAPs heavy

You know what my LEAST favorite part about blogging is?  Thinking of post titles.  Seriously, I am depleted.  After 4+ or whatever years it seems like there’s nothing left.  So I always wait ‘til the end and then I sit there, waiting to hit publish, while I stare at “enter a post title” on the top of the page.  Most of the time I go one of two routes – either super cheesy (like really lame puns) or super boring (like the name of a recipe).  It’s a miracle if it’s remotely clever.  But hopefully… Read more >

Lunch Lady

Kyle’s coworkers tease him (in a fun, non-mean way) about his healthy vegetarian lunches.  Apparently he’s the organic, non GMO hippie of his office, just like I am in mine. 🙂 Now his colleagues are wondering when I’m going to start packing food for all of them.  Which I’m considering a victory for veggies everywhere.    Thanksgiving leftovers on quinoa.  Oatmeal & snacks.   Spaghetti.  Crock-pot potato chowder (recipe coming).   Pita SB&J with organic Swanson sunbutter and home-made pluot plum jam.   18 Rabbits gracious granola packet with organic vanilla greek yogurt. Leftovers multiple ways

Last weekend we went to Veggie Grill for takeout.  You get a free entree for your birthday and since you have until the end of the month to use it, I was almost out of time!  I decided to try something new (I figured since it was free I should order something that I wouldn’t ordinarily get).  I hate to say it but I may have OD-ed on the All Hail Kale Salad. Business as usual

There’s not much that’s changed in my work life.  I just stopped taking pics of the food I pack to take to the hospital because it’s not interesting to me.   But it’s the same old same old.  With maybe 15% more food.  Because my appetite is hard to predict.   To jazz up this particular breakfast oatmeal, I added one mashed banana and some of the Halloween Pumpkin cookies to the mix.  No extra sweetener necessary.    I ate it cold – in two sittings.  So good.  Have you entered the kur treat giveaway… Read more >

Happy October

I’m trying to stay active in the kitchen.  Proof… I made muffins.  But before you pat me on the back for navigating my way out of my pregnancy laziness, you should know something.  These weren’t necessarily the result of an urge to bake, but mostly because I’m incredibly frugal and we had 3 brown bananas (and a freezer packed with frozen bananas) sitting on the counter.
