Tweak-er

My first attempt at oatcakes was a tasty one, but the texture didn’t work. The proof was in the pudding-like consistency. So I tried again.  Much better. Now I feel confident sharing this success story with you all. Still in progress

After getting back from a weekend at home, I made myself a ridiculously ambitious to-do list. Mondays already suck, this was overkill. Moody monday coffee. After the caffeine hit my brain I was feeling energetic and began to tackle my list with a carpe-diem-style vigor.  Bring it. Breakfast went from the above, to the below in ~30 minutes. Nut-less-ly nutty oats

I was craving a seasonal breakfast, but didn’t have any pumpkin on hand.  What I did have though, was a butternut squash.  You could cheat and use canned squash (they carry it at Whole Foods), but I decided to hack it with the real deal.  Squash prep can be as hard or as easy as you want it to be.  If you have a big a$$ knife, you’re good to go.  The simplest (read: quickest) way to go is to forego peeling the skin off, chop it into large chunks, microwave it (in a glass… Read more >

The bigger the better

These past few days have been a bit busy for me…among other things, I’ve been prepping for my follow-up job interview (which is tomorrow – eek!).  Coffee for four.  All for me 🙂 I have been cooking, too, but as you can see, blogging has taken the back burner.  Also, I’ve been having a string of bottomless pit days.  I’m sure you’re familiar.  You know the days when you’re stomach just won’t quit.  Which is all well and good, except that it leaves me with 482 photos to post.  Ugh.  I may as well dive… Read more >

Overnight success

Such a productive day!  First and foremost, I set up a job interview (hooray!), so…yeah.  There’s that.  But in addition to my latest career progress, I tackled more things on my to-do list and ate some amazing meals. The night before bed I threw together a tupperware full of overnight oats.  I know I’ve mentioned it before, but I do like my oats raw.  When I was young I ate Quaker’s packets with milk like cold cereal.  I guess today’s overnight oats are just the more nutritious version… I wonder how long 2 1/2 pounds… Read more >
