After getting back from a weekend at home, I made myself a ridiculously ambitious to-do list. Mondays already suck, this was overkill. Moody monday coffee. I was craving a seasonal breakfast, but didn’t have any pumpkin on hand. What I did have though, was a butternut squash. You could cheat and use canned squash (they carry it at Whole Foods), but I decided to hack it with the real deal. Squash prep can be as hard or as easy as you want it to be. Such a productive day! First and foremost, I set up a job interview (hooray!), so…yeah. There’s that. But in addition to my latest career progress, I tackled more things on my to-do list and ate some amazing meals. The night before bed I threw together a tupperware full of overnight oats. I know I’ve mentioned it before, but I do like my oats raw. When I was young I ate Quaker’s packets with milk like cold cereal.
