A faux cobbler & a giveaway

Being an overnight oat master (self proclaimed title), I decided to get crafty with my latest batch.   Apricot. Plum. Cinnamon.  Maple syrup. Oats. OOOOATS.   Peanut flour. Boiling water. Fridge time.  Next morning…voila!   Oaty layer on top, fruity layer on bottom.  Yum!   I’m a little late on the summer time breakfasts, huh?  This one is perfect for a hot summer morning with the sweet berries and cool nutty oats.  Hearty and fruity in one big bowl. Five pounds

When does 5 lbs. seem like a lot and when does it seem like a little?  It depends on the context.  5 lb. dumbbells – a little 5 lb. textbooks – a lot Lugging around a backpack full of textbooks is less than ideal for students, and something I lamented over constantly when I was in high school and college.  And yet, I lift weights, by choice, for exercise, several times a week.  5 lb. muscle – a lot 5 lb. fat – a little This is just my personal opinion, but I consider a… Read more >

Self fulfilling prophecy

I got 5 pounds of oats from Tropical Traditions and I’m working my way through it pretty damn quickly.  Aside from my daily – sometimes double – dose of oatmeal, I have been baking quite a bit too.  Since I had bananas with more brown than yellow sitting on the counter, I knew time was ticking until they would be freezer bound.  But I already have plenty of frozen nanners!  Must. Use. ASAP.   I was winging it as I went with this recipe, but it came out great, so I will share. Peanut Banana… Read more >

Stove-top oats are a prime example.  More often than not, I have no clue where my bowl of oatmeal is heading when I start boiling water.  Yesterday morning I wasn’t in the mood for anything too sweet, so I decided to make (plain) Greek yogurt my breakfast’s main ingredient.  Sometimes tangy trumps sweet.  After adding the yog to a bowl, I… Read more >

Making a salad a meal

Hi, I’m in a salad rut.  [never a bad thing]   As I’ve repeatedly blogged about, I’m a bit of a prep queen.  Whenever I know I have several shifts in a row, I make sure to prepare healthy and flexible food options ahead of time.  I hate coming home to an empty fridge (and after 12+ hours on my feet, I definitely don’t have the energy to start cooking a meal from scratch).  This week’s examples: Lentils & wheat berries.  [Soaking on stand-by] Veggies. [I always have greens, tomatoes, bell peppers, & carrots on… Read more >
