Two themes

When my hands are tied up and time is of the essence, I’ve been relying pretty heavily on two things. Theme number one: snack plates Veggies, meatless meatballs, Stubb’s BBQ sauce, Mary’s Gone twigs, sweet potatoes, daiya cheese, GF tortillas… This was a meatless meatball round (WF / 365 brand is bomb).  I go through phases with faux proteins.  Beyond Meat strips are a fave.  So are hard boiled eggs.  But sometimes I just stick to nuts instead of a “meat” snack item. Powerful strong greens

Talk about a lettuce with a kick!  Arugula is something fierce.  I’m not a huge fan, to be honest, but if it’s amongst other greens I don’t mind it. HOW!?! Seriously, how do SAHM / bloggers do it? I’m only 3 days into Kyle’s 10 days out of town and pretty sure I’m going to turn into an almond by day 5 at the rate I’m pounding through this Costco tub of roasted nuts.  And I haven’t written a single new post aside from this one I’m working on now.  Which may or may not go live before Kyle returns. House-warming & Memorial weekend

This past (long) weekend was important for family time because Kyle headed back out of town for business on Tuesday morning (after being away the previous week).  Gotta soak it up for the few days he’s around!  I’d be lying if I said it wasn’t hard, but since his start-up is young and fragile, it’s important to take advantage of these opportunities so the company will continue to thrive.  Growing pains are good.  As I type this he is en route to Colorado…10 hours into the 18.5 hour drive.  Ouch. A FODMAPs friendly “what I ate” day

Breakfast Udi’s mighty bagel with organic peanut butter and a fried egg.  I had the second half of the bagel a couple hours later.  Also with PB PB. I’m seriously obsessed with these bagels.  They are so hearty and full of seeds and whole grains, you’d never know they are wheat and gluten free.  Definitely the best GF baked good I’ve tried so far.  What sets it apart though, is the fact that it actually tastes like a bagel.  Not eggy bread.  Not nutrient devoid buns.  Not cardboard crap.  Real ingredients!  I can SEE the… Read more >
