After a full day of driving (11 hours to be exact), Kyle and I arrived at our hotel in downtown Portland just after 5 pm. He was ready to pass out, but I wasn’t going down without a fight workout and vegan meal in me first. As Kyle and I attempt to empty our fridge and freezer before moving, I have discovered both the pros & cons of pre-packaged meals. Pro: Mindless, easy prep (box –> plate? even a caveman Kyle can do that) Con: Stipation (where the greens at, yo?) Due to unforeseen circumstances, I’ve been a terrible blogger the past two days. If you are thinking I’ve been living it up since I’ve been job-less…well…think again. Wow, I’m behind in posting! Sadly, I was busy with boring things, so my catch up posting isn’t going to be all that thrilling…or thorough. I worked…and you know what that means…eating out of tupperware! Unfortunately, the above eats were not representative of what I actually consumed because I was floated to the ICU (no time for snacking) and my tum was acting up (no desire for roughage).
