Sometimes the perfect storm occurs and a rainy day overlaps with that time of the month (TMI? sorry male readers…) and all I want to do is bake. Chocolate, specifically. Yes please! Recently Gabriela made a batch of double dark chocolate peanut butter cookies that I bookmarked for just this sort of occasion. I modified the recipe a bit, as noted below. Double Chocolate PB Crunch Cookies (adapted from this recipe) Ingredients: 1 cup whole wheat flour 1/4 cup sucanat vegan cane sugar 1/4 tsp salt 3 tbsp special dark chocolate cocoa powder 1/2 cup… Read more >

When my alarm goes off in the morning, I get up immediately. I never hit snooze. Ever. So yesterday it went off at 4:25 am and I popped out of bed ready to start my day the best way I know how. However, after 46 seconds (give or take a few), I quickly came to the conclusion that working out was a bad idea. My head was a throbbing mess and my eyes were all puffy. [I have since discovered that I’m slightly allergic to the gorgeous bouquet Kyle got me for Valentine’s Day] So… Read more >

I made another hippie loaf. This pumpkin banana bread recipe is crazy yum. I should have made another batch way sooner. I don’t know what was holding me back. Actually I think I do. I rarely let bananas get to the mega-brown state that is oh-so-perfect for bread making. Smoothies and oats usually get them long before they reach that point of no return. This batch was moist like a muffin, but also fluffy like bread. Perfect when warmed and topped with peanut butter. With a side of coffee and berries. The weather lately has… Read more >

Love. Love. Love. You can pretty much slap any romantic words in front of a meal name on the 14th and it’s instantly a cupid-themed treat, right? (Well, maybe not mushy) This morning’s oats were anything but ordinary – they were hot and steamy. 🙂 The add ins were semi-special. Mostly because there was no moderation whatsoever in the amounts used. Sure it looks like a simple spoonful of raw almond butter above, but I actually added in the entire remaining portion seen below. I also added the whole banana into the oats when they… Read more >

The titles I was considering with the letter “K” would all be flagged as inappropriate if taken out of context, so I will simply say, I had 3 different meals with “K” foods the other day. The first was more of a breakfast snack really. Enjoyed with a home-made cappuccino. Make that a kappuccino (meaning it was dairy-free). I frothed up a full cup of rice milk then heated it and added it to a shot of caffeine. The foam took up half the cup, but the rest of the milk made the most rich… Read more >
