Tortilla therapy

My sisters and I were my mom’s sous-chefs growing up and one of my favorite dishes she made was an enchilada casserole because we got to rip up corn tortillas and then make layers out of the pieces.  It was so fun tearing them up and then putting them back together again like puzzle pieces. I like destruction and I love puzzles, so you can see why I was a fan of the recipe. For a while now I’ve been meaning to make a casserole that uses corn tortillas as a layer. When bread is more important than looking pretty

Have you ever had Eggs Benedict?  Don’t worry, there’s no hollandaise to be found in this post.    Truthfully, I don’t even know what’s in hollandaise sauce, but I think there’s butter and some other artery clogging stuff.  Not for me. Protein Power Crunch *high protein *gluten free *vegan (if eggs omitted) *FODMAPS friendly Ingredients: 1 cup whole rolled oats 1 cup uncooked quinoa 1/2 cup raisins 1/2 cup almond slivers 2 tbsp cinnamon 1 egg white (to make vegan sub… Read more >

Butter me up

I’m sorry for leaving you all in suspense after the nutty teaser. I made this trio of nut butter spreads for Kyle’s dad… Holiday Spiced Peanut butter Chocolate Cake Almond Butter Coconut Peanut Butter There weren’t really leftovers…mostly because Kyle kept poking his head in the kitchen when he heard the food processor stop…smart boy.  But I did make an extra batch of the chocolate one.  Because you can never have too much cocoa almond butter. Since we’re on the subject of chocolate, I may as well start with that recipe. Chocolate Cake Almond Butter… Read more >
