When I was a young thang growing up in CA I loved the rain. In elementary school indoor recesses were a novelty. In junior high and high school, the rain meant we had an excuse to get insanely muddy (yes, I was a bit of a tomboy). Especially playing soccer in the rain…so fun! Cut to my years on the East Coast… In NYC I hated the rain. It’s 9/29! You didn’t think I’d forget National Coffee Day did you!?!? Not a chance. I’m a tad behind in blogging because I’ve been playing catch-up around the casa. I’ve been productive, but I hardly deserve a pat on the back since it’s all stuff that I should have accomplished last weekend. For breakfast on Tuesday I had a bowl of One Lucky Duck grawnola, cheerios, and bananas on top of greek yogurt. This was my first go at almond butter, and even though the result wasn’t what I expected, the nutty spread that resulted was still pretty tasty, and thus worth sharing. Because I soaked the nuts beforehand, the consistency of the nut butter turned out more like almond fluff. Here’s a photo essay of the process. 1/2 cup raw almonds [They have to be raw because the healthy enzymes are destroyed in pasteurized and/or roasted nuts] 1 cup room temp water (or enough to cover the nuts) And that’s all. These past few days have been a bit busy for me…among other things, I’ve been prepping for my follow-up job interview (which is tomorrow – eek!). Coffee for four. Such a productive day! First and foremost, I set up a job interview (hooray!), so…yeah. There’s that. But in addition to my latest career progress, I tackled more things on my to-do list and ate some amazing meals. The night before bed I threw together a tupperware full of overnight oats. I know I’ve mentioned it before, but I do like my oats raw. When I was young I ate Quaker’s packets with milk like cold cereal.
