Extra food & extra coworker time

A whirlwind work weekend

I’d try to label these meals, but since I’m still on a bizarre night shift schedule breakfast is dinner, dinner is lunch, up is down, left is right…who knows…time is irrelevant in my life now.  I’m not really normal anymore. The above line is from a poem written by my adorable husband.  I may have to show it to you later.  :)  Since I am on night shift this week, I slept in ‘til noon, enjoyed a late breakfaat, and watched tv until 5:00 rolled around. Drinking the dregs

No matter how much I shake the almond or soy milk, the last cup of the carton is always SO MUCH BETTER than the rest.  I love the thick sediment that’s left at the end.  If only there were a way to make it all like that!?  Anyone else a fan of the nondairy milk dregs?   In case you weren’t aware, I’m a vanilla whore.  I usually buy the unsweetened or plain soymilk/almond milk and just add that and NuNaturals vanilla stevia to my coffee.  Lately, though, I’ve been in a mayj vanilla phase,… Read more >

It may not be summer, but I’m still roasting

Ok, I know.  It’s semi-odd to be roasting winter squash in June, right?  But I had a butternut and delicata squash hanging around the kitchen and figured I better seize the day. So I hacked my way into them, lubed the skin down with coconut oil, and popped ‘em in the oven at 375. I made sure to salvage the seeds to roast too.  They are loaded with iron and (quite frankly) delicious.  Those didn’t get coconut oil though.  They were sprayed with PAM and sprinkled in salt.  Nada mas, nada less.
