Work meal ideas

Contrary to what my posting may indicate, I do still work!  Sorry I’ve been withholding my packed eats from you guys.  I have only been taking pictures of 50% of them, though, so here’s what I’ve got.  Hope this helps you with some ideas! Oats.  Veggies.  Pretzels.  Sabra hummus (x2).  Lasagna (leftover).  Cookies.  Apple.  Candied ginger. Oat preference as of late: nuts, cinnamon & dried cherries.  When the cherries soak overnight they plump up to get to be the size of full cherries.  It’s pretty cool. Now that we are meal planning, my real real… Read more >

Still at it

I’ve been blogging for over 4 years. I know this because I remember Michael Phelps’ record relay swim was the very first day I blogged.  It’s hard to forget something that memorable.  Especially since I was at Boat Basin with friends and the scene was insane.  In a good way. Anyway, it’s crazy to me that I’ve been at this for so long…in all honesty, I never thought I’d write about food for any real length of time, but here I am, still doing it. My tastes have certainly changed along the way, but many… Read more >

A pasta-ful day

Breakfast: toast with almond butter, banana, iced tea with almond milk After breakfast Lynn came over to the westside and we went on a walk.    Even though I had an apple before we set out, by the time we got home I was starving.  I had some leftover mac ‘n cheese, which was a little set in it’s way, until I added some plain almond milk. That  helped transform it into the ooey gooey cheesy macaroni that vegans dream of. In truth, it reminded me a LOT of The Veggie Grill’s mac ‘n cheese,… Read more >

A lotta work for breakfast

I woke up wanting oats with almond butter.  Problem: no almond butter in the pantry.  But I wasn’t willing to entertain any other breakfast ideas.  So I set to work. Dry roasting almonds until they started to smell…toasty.    I think it was ~10-25 minutes at 375 degrees.  No oil.  Nada.  Just nuts in the pan.  They took a long time to cool.  Too long.   I got impatient and tossed them in the food processor even though they were still warm. And then left them to process.  From powdery to chunky to creamy smooth… Read more >

Rules for Oats

Remember last week when I was pancake crazy?  Well.  I’m back in an oatmeal rut.    Almond milk, cinnamon, bananas, peanut butter & maple syrup.    Rules for oatmeal (slash life): No playing favorites. Editing is not necessary (and often discouraged). Go big or go home. The more the merrier. You get the idea right?  I like lots of toppings.  And I like them all together.   Of course I can’t forget to mention the principles of frugality: Waste not, want not. Never leave a man behind. A penny saved, is a penny earned.  … Read more >
