Hold me over oatmeal

This bowl you see here?  It was something special.  I am determined to figure out the exact caloric and macronutrient breakdown because it kept me full for HOURS without weighing me down at all.  I finished it and felt both light as a feather and completely satisfied.  That’s a hard line to walk.  So what was in it? 1 cup dry whole rolled oats 2 cups water 1/4 avocado 1 tbsp nutritional yeast 2 fried eggs   I never wait for the water to boil before adding oats, I just throw them in at… Read more >

A few days of hippie bowls

Going into the weekend I had all my meals ready to go.  Starting with Thursday night, I made a typical hippie bowl.   If I had to choose a combination of ingredients to eat forevermore it would probably be these: quinoa, carrots, corn, seitan, avocado     I recently got a question about the ratio of grain to veg to protein in my “hippie bowl” type meals.  In all honesty, I don’t consciously compose them with a specific ratio in mind, but if I had to guess I’d say it is pretty much 1:1:1.  Sometimes… Read more >

Quinoa Quiche

Not much to say here people.  I think the photo speaks for itself. “Cheesy” Veggie Quinoa Quiche Dairy-free, gluten-free, vegetarian, low FODMAPS Yield: two 6 inch ramekin quiches Ingredients: 1 cup (pre) cooked quinoa 1/4 cup butternut squash puree 1 tomato, diced 1 large chard leaf, chiffonaded 2 eggs 2 tbsp nutritional yeast 1/2 tsp garlic salt (more/less to taste) Prep and combine veggies (chard, tomato, squash), then add nooch & garlic salt and mix. [The garlic powder in garlic salt is usually okay for those on a no/low FODMAPS diet, but if you are… Read more >

WTF ingredients: nooch

Recently, I’ve gotten a few questions in the comments section about nutritional yeast.    What is it? Nutritional yeast is a deactivated yeast (meaning it has no fermenting ability) and it is produced by culturing pure strains of yeast (a fungi) with a mixture of sugarcane and beet molasses.  Sounds appetizing, huh? Why do you like it? The reason it’s so popular with vegans and vegetarians is due to it’s “cheesy” flavor and vitamin content.  Since B12 and dairy are ruled out once you commit to an entirely plant-based diet, you can see why… Read more >

Lasagna rolls

I never thought an Asian inspired spring roll could taste so authentically Italian.  It seems weird, right?  But all it took was one bite and I knew I had made something particolarmente delizioso.  [fyi, that’s Italian for effing delish] Don’t judge these guys by their appearance.  I’m not exactly proficient in rolling spring wrappers.  As far as flavor goes though, these are dead on.  I promise.  Lasagna rolls (v, gf) Ingredients: rice wrappers (I double wrapped them, so make sure you have double the amount you want to make) tomato sauce spinach tofu ricotta  … Read more >
