Progress

Hey look!  An office! Now my crap is actually semi-organized. Kyle was getting really tired of seeing FODMAPs research articles and GI studies piled up all over our old apartment, so he gifted me some file cabinets in the “office” of our new place.  Such a romantic, that one. As you can see, the casa is coming along quite nicely. Our extra bedroom is big enough to double as an office and workout room.  And guest bedroom, of course. While unpacking we found a box of electronics that would make Steve Jobs roll over in… Read more >

Hungry Hungry

These past few days my appetite has been ravenous.  [I haven’t done any form of exercise, though, so it’s definitely odd.  But my body is far from normal, so I just went with it.]   Take breakfast for instance, usually a tupperware of oatmeal with the fixins will hold me over pretty well. But I had this before I left for the hospital and was already hungry for my next meal by the time my shift started at 7 am.  WTF? I had a banana and breakfast cookie and praised the Lord when I saw… Read more >

Millet meals

This week’s grain was millet. It’s small, gluten free, and has a cornbread like taste. I make it in the rice cooker, like I do with everything else, using the same water to grain ratio as rice, quinoa, and couscous.  Honestly, it’s impossible to mess things up in a rice cooker. This one just so happened to be especially on the money…because when I went to scoop it into a tupperware it came out as easy as could be, no spoon required.  Literally. This is from flipping the bowl upside down.  I actually attempted to… Read more >

Reader’s request: For simplicity’s sake

Nowadays I tend to post my more creative recipes as opposed to my thrown together quick plates.  But every time I show a random meal that I have mindlessly made up I get requests for them to continue.  I guess people just want simple.  Here is simple: quinoa, carrots, peas, and seitan.  Prep: Bulk quinoa from the rice cooker.  Frozen peas.  Log seitan made before the work week starts.  So the only thing I had to do when I got home was chop (horse carrots and seitan) and scoop things onto my plate.  It… Read more >

Italian Amore

It’s been a while since I’ve made lasagna.  Kyle reminds me of this every month or so.  It’s one of his favorite dishes.  I went through the HHH archives and although I’ve showed the final products a few times, I’ve only posted a recipe once on the blog (a very long time ago). You’re due for an update. And since we are working on cleaning out our pantry and freezer, I figured it was high time I did the damn thang.  After all, we had two boxes of noodles, three jars of marinara, and two… Read more >
