I realize this looks like kinda a mess…buuuuut… What can I say? Do you eat with your eyes? No. I created this dish because I had squash for days and thought it would be a good idea to cook some bulk freezer meals so I have healthy home-made stuff on hand. Hello layerzzz. I ended up using 3 summer squash and 4 tomatoes, but you could really use whatever you have on hand…eggplant, zucchini, etc. The top is a corn meal crust, which I probably should have cooked a bit first because it ended up… Read more >

Dramatic post title, huh. Even though I’ve already technically started work, it has all been fluff stuff, like HR paperwork, physical eval, etc. So this weekend was my last REAL weekend as a stay-at-home mom. It’s sad. I am trying not to think about what I’m missing while I’m away. But I do like that I can re-discover myself again outside of my mom role. I wouldn’t go back to nursing if I didn’t love it. Anyway, Friday was a pretty boring day. I dragged P to Sac with me because I had an appointment… Read more >

But like I mentioned before, we got a ton from our neighbor, so I had to figure out something to do with it. I think it’s best paired with meat, but that’s not an option for me, so I cooked it into a couple of veggie stratas. The first went with Kyle on his drive to Colorado. The second I made for myself. Arugula Tomato Strata… Read more >

Whenever I get a recipe out in real time it’s because it was so good I can’t not share it immediately. I basically dropped everything (except my son of course) to write this post. Now THIS is what I’m talking about! I rarely put much work into lunch. It’s my quickie meal of the day. I throw together whatever. Dinner is the meal I spend more time on, prepping and planning. But this was a very worthwhile exception. Sure it took a bit more work. But actually, not really. To me, the 90s were all… Read more >

This is gonna be a long one, but I like recapping our little family weekends, so this is selfishly for my own (online?) memory. Friday morning I had my usual breakfast, toast with an egg. Only I added something special, that I’ll review more thoroughly later on. Hint: it’s the peanut butter. After eating I spent the morning prepping for an interview. I have mixed feelings about my timeline for going back to work and it’s a complicated issue that I’m not going to discuss on the blog. Once I know what the plan… Read more >
