Vegan “buttery” mashed UNpotatoes

Ingredients 1 big ‘ol parsnip (check out the fatty below) 1/2 cup cauliflower florets (approx 1 medium sized head) 1/4 cup butternut squash (approx 4 large chunks) 1 tsp miso paste (optional) 1 tbsp nutritional yeast 1/3 cup nondairy milk (I’m a fan of rice milk or coconut milk) salt & pepper to taste Instructions First peel the parsnip (I don’t go out of my way to get all the exterior off, just a loose skinning to get off the major ickies).  Then, chop and steam the crap out of the veggies (the mushier… Read more >

I’m back (and it’s cold)

After a fairly miserable red-eye flight, Kyle and I returned to our 10 degree apartment Monday morning.  🙁 With a list of errands longer than the Gettysburg address and a brain still on a mental vacay, it goes without saying…I felt a bit overwhelmed.  It didn’t help that I couldn’t stop shivering for the first 2 hours.  I finally had to take a shower to get my body temp back to a normal range.  After a piping hot cup of cocoa (the apartment is coffee-less!!) I unpacked, laundered, made a grocery list…and STILL felt like… Read more >

Tick Tock

Last day of work before I go home!!!!!!!!!!!!!  Today’s shift seemed like the longest countdown of my life.  I was actually pretty busy with my patient load, but I was still hyper-aware of the time left ‘til I was home freeeeeeeee. Here’s what I had packed up: I spy with my little eye…MORE pita chips (damn you Stacy), two freakishly large apples, a Chocolate Brownie Z bar, White Chocolate Macadamia Luna bar, Blueberry Crisp Clif bar, and a fiberrrrific MONSTA salad. Holy veggie-loading.  This salad contained: steamed kale, raw spinach, cukes, steamed carrots, cherry tomatoes,… Read more >

Work times 3

Doing three (12 hour) shifts in a row is my least fave thing to do.  I avoid it like the plague swine flu.  However, my parents are coming into town today (yipeeeeee!!!), so I had to get all my work out of the way so I could have the weekend off :)  It was an especially rough stretch because I only had one day off between my last weekend of chaos and this 72 hour stint.  No matter.  Ready for all my work lunches: Tuesday Salad, bars, Whole Foods’ spelt pretz, carrots, apples, and tea… Read more >

Tutorial: How to make seitan

Since I got several questions about how I make my seitan, here’s a quick run down of the process. It may sound complicated, but I swear it’s the easiest thing you’ll ever stick in the oven, so PLEASE don’t be afraid to give it a shot.  *I base my recipe off of Vcon’s simple seitan, but I make it with even fewer ingredients and steps (and it still turns out fabulously well).  Sometimes less is more, right?  Plus this way it is easy to jazz up with flavors and spices in other recipes/dishes that call… Read more >
