Thoughts on the elimination phase

Being vegan and monitoring fodmaps is a bit tricky.  Without animal meat (or the galactans category, aka beans/legumes), there isn’t much left to provide adequate protein…or so I thought. Quinoa carotene bowl

Who loves orange food?  I do!  I probably have amazing Vitamin A levels 🙂   Sweet potatoes have B-carotene up the yin yang (a precursor to Vitamin A).    I had baked these rounds a few day ago and they were just waiting to be incorporated into a recipe.   More orange foods!  Bell peppers and carrots and hummus… Plus red quinoa and couscous.   I ate some of the baked sweet potato rounds as chips.  Perfect hummus vehicles 🙂 The only thing you need to do for this recipe is add everything to a… Read more >

A bit bruised

So here’s the sitch.   Did I mention I have a triathlon in under 30 days.  Problem?  Yes.  It gets worse.  I got in an accident yesterday while riding my bike, which I was in denial about until I went to work today…and wound up in the ER half way through my shift.  I feel like I got hit by a bus.  I am so so sore.  It’s unbelievable.  I have less than 50% range of motion in my neck and my tailbone is badly bruised.  I basically feel stiff all over.  Anyway.  I don’t… Read more >

Wonder of wonders

Miracle of miracles, my breakfast held me over until my lunch break at 1 pm.  That NEVER happens!  I have this cute bowl to thank.  :)  Attune foods hooked it up at Expo West – not only did I get this on-the-go bowl (like a sippy cup for adults), but I also got to fill it with whatever cereals I wanted.  As a huge cereal addict, this was one of the highlights of the Natural Foods show.  I could hardly contain my excitement combining all the cereals to make one mega-master-mix.  Uncle Sam – check! … Read more >

Beer, pizza, and insomnia
