This is the rainbow lunch mish mash that I heaped on my plate Saturday. On the bottom is a cauliflower “pizza crust” which is topped with cabbage slaw with home-made mayo + lemon caper dressing, avocado, and nutritional yeast. Ugly as it looks, it was one of the best things I ate all weekend. But then there was this dinner. It took no time at all and was pretty awesome. Sriracha Quinoa Sushi Bowl Ingredients: 3/4 cup uncooked quinoa 2 avocados, diced 1 mango, diced 16 oz crab meat 3 tbsp mayonnaise… Read more >

Pretty much my breakfast all week. Except for this one. With nomnompaleo’s cinnamon banana coconut pancakes. Thanks for the suggestion Ttrockwood. 🙂 Hipster babe. Brussels before and after. I used this recipe and it’s my new favorite way to eat ze sprouts. For the record, I’m not a picky one with the cruciferous category (I love all my greens in sickness and in health), but Kyle is and he loved them too…so if that’s any indication of the yum factor, there you go. omgomgomgomgomg [fingers crossed] You all know about that whole… Read more >

I did a pretty good job of meal planning that last week of the year. First we finished off all the holiday leftovers we brought back from my parents’ house, including stuffing, roasted veggies, mashed potatoes, and lima bean casserole. One day, I jazzed it up and made a cheesy “gravy” sauce with nooch and water. And another day, I paired it with a salmon burger for some protein. Kyle took care of the rest of it. There was also extra shrimp and veggies from my parents’ holiday party so I pulled… Read more >

And for a solid week it sat untouched because I was too intimidated. I didn’t want to initiate it into my kitchen arsenal with a lame recipe or anything so-so. It had to be epic. Why? Who knows. It’s all in my head. In the end, I chose a cheesy pumpkin sauce. Because blending nuts to creamy dreamy bliss (in seconds!!) was too fun… Read more >

I am bad about taking pics of my daily eats (like I used to) but I get requests for them more than the “real” recipes…so here are bunch of the quickie things I throw together on the regular. From last week… Millet with sautéed spinach, baked tofu & avocado I made the millet in the rice cooker, sautéed the spinach with sesame oil and tamari, and used Wildwood tofu. I made extras. I also re-made this salmon pasta, but in a HUUUUGE vat. Lots of veggies to use up? Throw them in! I… Read more >
