As far as work weekends go, this one was pretty sweet. For some reason I was only scheduled to work Saturday (weird)…so having both Sunday AND Monday off basically felt like a full weekend. I’ll take it! As a result, I had some QT with my beau PLUS I got in some decent exercise. I made a Mexi-kale salad for lunch. Sure, I just coined the term, but I think it fits. On top of the kale was wakame seaweed, butternut squash, cherry tomatoes, black beans, and some salsa (added later so it wouldn’t sogg-ify). Yes, I realize the involvement of seaweed in a south-of-the-border themed salad may be a bit of a stretch, but can’t I just claim poetic license on this one? At the risk of sounding insensitive, is anyone else really sick of all this Michael Jackson coverage? I loved the king of pop just as much as the next person, but excessive coverage has come and gone…at this point, it is borderline hideous. What ever happened to just having a moment of silence to show your respect?
