Eat, work, run

Work it bay-bay. My pre-packed food included: THREE bars (PB cookie Larabar, Chocolate Brownie Z bar, and a Peanut Toffee Buzz Clif bar) TWO apples …and a partridge in a pear tree ONE ginorm salad Like an onion, this sh!t had layers and layers: steamed kale, broccoli, BN squash, cannellini bean, cherry toms, and raisins – I added Bragg’s apple cider & liquid AA’s to it, too.  The spelt pretzels were the perf accompaniment (as anything with salt is). For the record, I skipped my AM starbeezies and brought my own tea bags (and I… Read more >

Ode to the in-laws

It’s no wonder people are scared of their significant other’s parents; with movies like Meet the Parents, in-laws get a pretty bad rap.  Fortunately for me, this stereotype couldn’t be further from the truth.  I just got back from a weekend+ getaway with Kyle’s family and I couldn’t be more thrilled to be joining his family than if they were the sole heirs to the Whole Foods chain.  Not only are they amazingly accepting of my vegan lifestyle, but they go above and beyond to accommodate it, to the point of straight up spoiling me!… Read more >

91 Thanksgiving posts

Happy (belated) Thanksgiving! Quite frankly, I delayed writing this post because I felt like everyone else’s thanksgiving eats were way more blog-worthy (and there were a LOT of them).  Plus, I didn’t get home from work until after 8 pm and all I wanted to do at that point was put on my PJs, watch football (slash Home Alone), and stuff my face (not in that order).  On a holiday such as this, it would feel weird to eat before giving thanks, and so I feel as though I should acknowledge what I’m grateful for… Read more >

(extra long) Sigh.

What a short lived break.  Having only one day off of work was such a tease.  So back to the hospital I went. The usual crew of lunchables: salad with a lot of greenery, roasted carrots with cranz, Spiced Pumpkin Pie Clif bar (why does this have to be seasonal, it’s SO good), PB cookie Larabar (best flavor, definitely, best flavor), TWO apples (not baby horse ones, these are the big bad boys), dried pineapple and pears. Foggy bag much?  By the way, I’m completely obsessed with roasting carrots into fries.  I could easily go… Read more >

Cold weather challenges

It’s been pretty cold lately, and with the change in weather comes several personal challenges.  Comfort food.  Why is it called that?  It certainly doesn’t leave you feeling comforted.  For all intents and purposes, it should be called UNcomfortable food, because of how it leaves you feeling.  But then, who doesn’t crave warm foods during the cold months?  Sure, there are healthy hot dishes, but soup gets old, and suddenly I find myself drawing a blank on the meal creating front and resorting to some stereotypical (aka less than healthy) alternatives.  Because of this, the… Read more >
