I made this on our last night in Nor Cal and just wanted to quickly share the recipe I used. I found a few different recipes and combined them to make my own. Can you believe I’ve never cooked with coconut milk before? I love Thai food, especially the really amazing curry coconut milk broth dishes. I guess that’s probably why I’ve never taken a stab at creating something similar at home. It seems like mission impossible to get the perfect balance of Thai flavors and spices (especially when it comes to international spice… Read more >

As I alluded in the last post, we had a road trip planned for the next day in Nor Cal. Boy oh boy are we pushing our luck with all these long car rides with an infant! But this is what he does most of the time so we are really lucky (so far). Fingers crossed. I packed lots of food for us so we could hit the road early (basically right after we had both showered and I’d breastfed P). Kyle and I both had similar breakfasts, but his was sandwiched between some… Read more >

For the past 6 days Kyle and I have been in the East Bay. It’s incredible having P in my hometown – and very cool/weird/surreal taking him to all the places I grew up around. He’s also gotten to meet some of my bestest friends. But I’ll back up to the trip to get here…because we were slightly apprehensive knowing we had a 6+ hour drive with a baby. We’ve conquered hour long walks no problem. Short outings are a breeze. But the I-5 is a whole other ball game – there are 35… Read more >

OH. EM. GEEEEEEE. Ok, I know it’s kinda weird to get SO excited over a casserole, but this was crazy good. And simple! My mom went grocery shopping for us while we were in the hospital and she bought us tofurky’s chorizo crumbles, which I’d never tried before. I’m skeptical of faux meat products. I have my faves (like Field Roast), and I have my avoids (like smart pups), so this one remained to be determined… It’s soy based (non GMO) using soy flour and canola oil, with not much else aside from seasonings. Not… Read more >

Is Kyle’s birthday. We are celebrating for reals later on this week with a date night (!!). My mom is going to babysit. It’s exciting. Today, though, we have been hanging out enjoying the fact that we are all three together. We’ve already gone on a nice walk and the rest of the day includes season 2 of Downton Abbey and take-out from Veggie Grill (birthday coupons = free entree, heyooo). Oh and I made cake! And frosting! Both are vegan and sugar free. I’ll post about it later. Last night I made a… Read more >
