All over So Cal

This weekend Kyle and I visited my G-ma in Newport Beach, went to a friend’s baby shower in Fullerton, attended a wedding in Temecula, and stayed with Kyle’s parents in San Clemente.  If you do the math, that’s over 300 miles of driving (6+ hours!!!). Check out how fun this looks. Just our luck – gas prices reached $5.50 per gallon this weekend!  Isn’t that fabulous?  Of course record breaking fuel prices would coincide with such a jam packed weekend on the road. Olive oil kale chips

  There are lots of kale chips recipes out there.  This is the basic one I use.  If you like the flavor of kale, you’ll like these chips.  If you’re looking to mask it’s green Earthy flavor a bit, you should probably look for a recipe that has a more cheesy coating (usually the best ones involve cashews and nutritional yeast).     Ingredients: kale olive oil salt Directions: Wash, de-stem and tear kale into pieces.  Put the kale into a big mixing bowl and add olive oil and salt.  Massage the kale with your hands… Read more >

Sweaty Selections

This weekend was a (partial) work weekend.  And it was INSANELY hot.  Fall is nowhere in sight and while I usually love 90 degree temps, my hormones are not on the same page.  At all.  Our AC isn’t doing much of anything and so Kyle and I spent a large part of the weekend bitching about how uncomfortable and sweaty we were.  So productive. A September day

This is an attempt at a “what I ate” full day of food.  I think I got everything. Cantaloupe.  With this, I get credit for vitamin C, vitamin E, riboflavin, folic acid, & B vitamins…it satisfies both a fruit and leafy green requirement as per What To Expect.  Efficiency in my nutrition – I like it!   For breakfast we were out of iced tea AND eggs.  Basically a mini disaster.  I made decaf tea in as little water as possible and cooled it down to room temp with a ton of almond milk.  It… Read more >

A case of silken tofu

A reader recently discovered she wasn’t able to tolerate tofu…after ordering a case of Mori-Nu silken lite firm tofu.  So she sent them to me!!!  Thanks again Emily 🙂   They arrived slightly crushed, but I immediately got to work on cooking with them.   I had already planned on making a lasagna that day, but I’d only ever made the tofu “ricotta” with extra firm (non-silken) tofu before.  I figured I may as well give it a try with the silken kind.
