I had an awkward transition mid-week from a normal routine to a night shift routine. The first day is always awkward. I woke up at 7:30 and tried to go back to sleep but wasn’t successful in the least. At 8 I gave up and showered. And breakfasted. With toast and eggs x2. And iced tea with almond milk. It seems to be my summer breakfast of choice. Before yoga I had a banana. And then I got zen. Ommmmm. As per usual, I went to the WF across the street afterwards. Juice! I can’t… Read more >

This is a take on my previous manicotti recipe. Only better. Kyle called it the best I’ve ever made. I’d love to take all the credit, but I have a feeling the Sabra tuscan herb garden hummus played a large role too. To make the manicotti filling, I used the entire block of organic extra firm tofu, a heaping 1/2 cup of Sabra hummus, and 1/3 cup frozen spinach. I crumbled and mixed it all together with a fork (hello arm workout) until it resembled a ricotta cheese texture. Unlike last time, I opted… Read more >

What a weekend. It all started with a Friday wedding. Ok, actually it all started with a really awesome breakfast. Oats topped in a perfectly fried egg and avocado. Kyle came home from work early, so I got to eat lunch with him, which was a nice change in routine. I had Amy’s golden lentil soup. It was stellar! I have already gone to the store to get another can, that’s how much I loved it. I think this is now the best Amy’s soup I’ve ever tried. On the side I had carrots… Read more >

After a week of saving money on home-cooked meals a la plan, I opted to splurge for the weekend. Lazy me. I was working though, so it was my treat. I snacked on chex and chocolate crunchfuls. The crunchfuls are made with pea protein. I got them in a sample pack a long time ago. I reviewed the plain ones here. The chocolate ones are better but still have a definite pea flavor going on. I could get used to it (and didn’t really mind it that much), but if you’re looking for a… Read more >

Our days of mid-week play are over. Kyle started his new job this week, and it’s probably almost as sad for him as it is for me. I loved having him around on my days off. A lot of the time he was working from home, but I’d still rather sit across from him in silence than have him gone at the office all day. Oh well. School is done. Now we are grown ups, I guess. On our last day together (a Saturday), we slept in, lazed in the backyard sun, and then went… Read more >
