But after soaking up some rays and a few cups of coffee, we headed to the tennis courts for a complimentary hour of professional play horse play. I’ve been busy busy busy working this week…and even though I haven’t exercised for even half a second (blah), it’s all worth it because I get to spend the weekend with some fantastic friends. One of the easiest ways to make sure you eat well and save money is bringing your own food to work. I’m practically a pro at packing meals to-go because I work at a job that requires it. The building blocks for a delicious work lunch… Avocado and tofu. Since I make my work lunches the night before, I am usually in a rush to get to bed. Thus, tofu prep tends to be on the minimalist side. I like plain ‘fu so I don’t really care much. All I did was cut some of the block into cubes, spritz it with Bragg’s and microwave it in a glass bowl with a CoverMate cover.
