Whenever I go home to visit my parents I’m reminded about how lucky I am to have been raised with health in the forefront. The importance of eating well and staying active was a given, so I have never seen wellness as a chore. Eating balanced meals and participating in sports were, quite simply, just the norm. The word “leftovers” implies the portion in question was at some point unwanted. When you feast on farm fresh fare, this is most definitely not the case. But (shocking as it may seem) there was food left over from dinner. Swiss chard, grilled avocado, grilled bell peppers, and grape tomatoes (all from the farmer’s market), red quinoa, and vegan sausages. You guys are HILARIOUS! I loved the guesses about my pasta’s hidden ingredients. To back up a bit. A few days ago, I had a typical oatmeal breakfast with strawberries, raisins, and peanut butter. Who loves orange food? I do! I probably have amazing Vitamin A levels 🙂 Sweet potatoes have B-carotene up the yin yang (a precursor to Vitamin A).
