What I Ate

It’s been a long time since I did a “what I ate in a day” style post, but I feel like returning to my OG format for the a moment.  Here goes. Breakfast: Vegan & GF pancakes (made with Bob’s Red Mill mix and almond milk).  I didn’t use any kind of vegan egg substitute, I just left it out.  I also used only almond milk (rather than the water/oil combo they recommended). A three-fer

Not meatballs. I should have made a bigger batch of these coconut macaroon things because Kyle ate half of them before I even tried one.   Work food.  Banana.  Carrots.  Macaroons. Food notes

As you all well know, I pack my own food to bring to work every single day.  Some days I don’t take photos because I have leftovers that I’ve already shared (or I’m just lazy).  Sometimes I take pictures and then forget to post them, and then they pile up on my hard drive.  <— I’m pretty sure I’m eerily close to a crash. Super simple granola

Yesterday I promised you quite a few posts… This one probably whet your appetite the most.  And rightfully so. I’ve already perfected quinoa granola before, so how does this one differ?  Well, it’s lighter for one.  The ingredients list is shorter, too. While I enjoy others cooking for me, I also like making my own food because I want my meals a very specific way am a control freak change my mind multiple times while cooking.
