Turns out, cabbage is cheap. The other ingredients were things we had on hand already – including frozen green chickpeas (365 brand) and carrots. Not a typical statement (or opinion). For me at least. But I’m being honest here. Between the hours of noon and 5 pm, I graze. Meals have no room here anymore. And I’m not super proud of what has been going in my mouth this last week. It’s not terrible stuff. But it still leaves me feeling blah. I can do better. I miss well balanced full meals. I actually started a spread sheet on excel to track our monthly grocery expenses so that we could really stick to our financial goals. I’ve alluded to this sauce combo (I hesitate to claim it as a recipe) before. It’s the easiest. It’s basically a lightened up, more nutritious, version of vodka sauce. It’s not dairy free, because Greek yogurt does have dairy. But I know that many people who are sensitive to dairy tolerate greek yogurt (me and my sisters are all included in this category).
