I’ll own it. Since last weekend, I’ve been phoning it in here on HHH. Just plugging along as per usual – work work work with free time filled with potting plants and cheering on my husband. And eating. I’ve been poking my head into the Food Revolution truck every day on my lunch break to see if Jamie Oliver is there…still no sighting though. I really want to show my lunches off. I probably make or pack Kyle’s lunches 75% of the time. He only eats on campus a few days a week and every once in a while it aligns with my work days. Which means… I can pack both of our food the night before and kill two birds with one stone. His differ in that they often have cheese and packaged health bars, but otherwise they are very similar. Last morning in Philly! Rather than trek into Center City again, we stayed in our ‘hood for breakfast. Even though they are right next to each other, I’m not very familiar with either Penn or Drexel’s campus. Because I was in the accelerated nursing program at Drexel I spent nearly all of my time in Center City. The only occasion I had to go over to the main part of campus where the university buildings and lecture halls are was for finals (HESI exams). Blah. We are deep enough into May that I’m comfortable calling it summer. I mean, it’s basically June, which is definitely a real summer month. So yeah, I’m thinking it’s time to start celebrating the season. Who’s with me? Cocomo Joe is, that’s for sure. For no intentional reason, I’ve broken away from oats this past week. Brown rice + bananas + blueberries + no-grain-ola + almond milk. Not that you need a play-by-play, but here’s the deal. I made a massive amount of brown rice (in the rice cooker), but day old rice needs a little moisture. So I re-heated it in the microwave with almond milk. Then I added some frozen bloobs, which quickly thawed once they met the warm rice. Plus bananas. And finally, I topped it off with a bunch of nutty granola…. Read more >
