A few prepared meals (not by me)

I’ve been a kinda pathetic wife.  At least in the cooking department. Last week I was so busy working I didn’t cook us anything.  Yes, I work nights.  So in theory I could cook us food.  If I had my head on straight.  Which I didn’t. Frozen food to the rescue! Vegan Grape & Chix Salad

  Vegan grape & chix salad [vegan, gluten free] Ingredients: 1 cup diced vegan chik’n meat (ie Beyond Meat, gardein, etc.) 1/2 cup halved red grapes 2 tbsp vegan mayo (ie Nayonaise, NayoWhipped) 1 tbsp garlic infused olive oil (ie Garlic Gold) 1/4 –1/2 tsp curry powder 1/2 tsp mustard powder salt & pepper (to taste) Directions: Dice faux chick’n meat and halve grapes.  Add to a bowl.  In a separate bowl combine mayo, oil, and spices.  Then add to the meat & grapes and stir until well coated.   Notes: I used mustard powder… Read more >

Separately vegetarian

The drive home and the day on campus

I made a major mistake and didn’t say decaf when I ordered this (venti soy misto) before we hit the road to come home from NorCal. I was very perky!  I hope P didn’t get as high as I did off the caffeine!  Oops!! The rest of the road trip was similar to the first one – Kyle and I traded off driving duties and our little man slept 99% of the time. I packed up our eats again.  Similar as always. Staying savvy at Costco

How smart is Costco?  I mean, they charge for membership.  Then they entice you with samples.  And they have EVERYTHING.  All for a cheaper price than you’d find (almost) anywhere else. But here’s the downside.  You don’t need a 10 pound block of cheese or 50 veggie burgers at once.  Unless you’re about to cater a party, for vegetarians, that’s an insane amount of food to have at your house.  And really, who has enough fridge/freezer space for that?  So how do you use Costco (or Sam’s Club or whatever bulk store you shop at)… Read more >
